Corn Meal Rolls

  • 1/3 c. corn meal
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1 pkg. yeast
  • 1/4 c. warm water
  • 2 eggs, beaten
  • 1/2 c. shortening
  • 2 c. milk
  • 4 c. flour

Directions

    Place corn meal, sugar, salt, shortening and milk in double boiler.

    Cook until thick, stirring frequently. Cool to lukewarm. Add yeast softened in lukewarm water, then eggs. Beat thoroughly and let rise in warm place 2 hours.

    Add flour to form soft dough. Knead well on floured surface.

    Place in greased bowl. Cover and let rise 1 hour.

    Punch down and make into rolls.

    Let rise until double and bake at 375° for 15 minutes.
