- 1 1/4 c. white or yellow corn meal
- 1 c. unsifted flour
- 1/4 c. granulated sugar
- 1/4 c. firmly packed light brown sugar
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 egg
- 1 c. buttermilk (put a little vinegar in the milk)
- 2/3 c. corn oil
Directions

1Grease 12-cup muffin tin.

2In a medium bowl, use a fork to stir in together corn meal, flour, both sugars, baking soda and salt.

3In a small bowl, beat egg slightly with buttermilk and corn oil.

4Join both mixtures and stir until moistened.

5Spoon into prepared muffin tins.

6Bake in a 425° oven for 20 minutes or until golden.

7Remove from pan and cool before serving.
