Ingredients

  • 1 1/4 c. white or yellow corn meal
  • 1 c. unsifted flour
  • 1/4 c. granulated sugar
  • 1/4 c. firmly packed light brown sugar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 egg
  • 1 c. buttermilk (put a little vinegar in the milk)
  • 2/3 c. corn oil

Directions

    Grease 12-cup muffin tin.

    In a medium bowl, use a fork to stir in together corn meal, flour, both sugars, baking soda and salt.

    In a small bowl, beat egg slightly with buttermilk and corn oil.

    Join both mixtures and stir until moistened.

    Spoon into prepared muffin tins.

    Bake in a 425° oven for 20 minutes or until golden.

    Remove from pan and cool before serving.
