- 1/4 cups Canola Oil
- 1-1/2 cup Cornmeal
- 1/2 cups Whole Wheat Pastry Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Sea Salt

1Preheat oven to 400°F. Grease either a 12-cup muffin tin or a 9x9 pan.

2In a medium bowl, mix together the maple syrup, almond milk, and oil. In a smaller bowl, mix the cornmeal, flour, baking soda, and salt. Gently add the dry mixture to the wet and stir until JUST combined.

3Pour the batter into the pan and bake for 25-30 minutes, or until the tops of the muffins bounce back when touched.
