- 2 beaten eggs
- 1 (17 oz.) can creamed corn
- 1 (17 oz.) kernel corn (including juice)
- 1 pkg. Jiffy corn muffin mix
- 3/4 c. butter
- 1 medium chopped onion
- 1 medium chopped green pepper
- 1 c. grated Mozzarella cheese
- 1/2 c. grated Cheddar cheese
Directions

1Mix in bowl the eggs, creamed corn, kernel corn and muffin mix. Saute butter, onion and green pepper. Put batter mix in greased 13 x 9 pan. Sprinkle saute mix on top. Sprinkle Mozzarella cheese and Cheddar cheese on top. Bake at 350° for 30 minutes.
