  • 2 beaten eggs
  • 1 (17 oz.) can creamed corn
  • 1 (17 oz.) kernel corn (including juice)
  • 1 pkg. Jiffy corn muffin mix
  • 3/4 c. butter
  • 1 medium chopped onion
  • 1 medium chopped green pepper
  • 1 c. grated Mozzarella cheese
  • 1/2 c. grated Cheddar cheese

Directions

    Mix in bowl the eggs, creamed corn, kernel corn and muffin mix. Saute butter, onion and green pepper. Put batter mix in greased 13 x 9 pan. Sprinkle saute mix on top. Sprinkle Mozzarella cheese and Cheddar cheese on top. Bake at 350° for 30 minutes.
