*Corn Spoon Bread

  • 2 eggs, slightly beaten
  • 1 c. sour cream
  • 1 (8 oz.) can creamed corn
  • 1 c. Swiss cheese, grated
  • 1 (8 oz.) pkg. corn muffin mix
  • 1/2 c. butter, melted
  • 1 (8 oz.) can whole kernel corn, drained

Directions

    Combine eggs, muffin mix, sour cream and melted butter.

    Stir in both types of corn.

    Pour into greased, oblong baking pan. Bake at 350° for 35 minutes.

    Sprinkle grated cheese on the top and bake an additional 10 to 15 minutes.

    This is a good potato substitute with ham or pork dinner.
