- 3/4 c. all-purpose flour
- 3 tsp. baking powder
- 2 Tbsp. sugar
- 3/4 tsp. salt
- 3/4 c. yellow or white corn meal
- 1 egg
- 1 c. milk
- 1/4 c. melted shortening
Directions

1Sift flour; measure and re-sift 2 times with next 4 ingredients, the last time into mixing bowl.

2Beat egg well; stir in milk and melted shortening and pour all at once into center of dry ingredients.

3Stir quickly until dry ingredients are just dampened, then give 3 or 4 more stirs.

4Batter should not be smooth.

5Spoon quickly into greased, hot corn stick pans or muffin pans, filling about 2/3 full.

6Bake in a hot oven (425°) for about 25 minutes or until golden brown.

7Remove from pans immediately and serve at once.

8Serves 10 to 12.
