- 1/4 c. vegetable oil
- 2 tsp. baking powder
- 1 egg, slightly beaten
- 2 c. cornmeal
- 1/2 tsp. baking soda
- 2 c. buttermilk
Directions

1Preheat oven to 400°.

2Place oil in a 10-inch black iron frypan; heat in oven 10 minutes.

3Combine cornmeal, baking powder and baking soda in medium size mixing bowl.

4Beat together the egg and buttermilk carefully.

5Stir into dry ingredients; do not overmix.

6Stir in hot oil.

7Pour batter into hot frypan.

8Bake for 30 to 40 minutes, or until golden brown.

9Remove from frypan to serving plate.

10Cut in pie shaped wedges.

11Serves 8 to 10.
