Cornbread and Sausage Stuffing

  • 2 tablespoons olive oil
  • 1 cup chopped andouille sausage
  • 1 small yellow onion, chopped
  • 12 cup chopped green onion
  • 4 tablespoons chopped celery
  • 4 tablespoons chopped green bell peppers
  • 2 tablespoons minced garlic
  • 2 cups coarsely crumbled corn muffins
  • 1 cup chicken stock
  • 1 teaspoon creole seasoning
  • salt and pepper

Directions

    Heat oil in a large skillet over med.

    high heat.

    Add yellow onions and sausage.

    Saute 1 minute

    Add green onion, celery, bell peppers and garlic.

    Stir in corn muffins, stock and Creole season.

    Season to taste with salt and pepper.

    Cook stirring and shaking the skillet about 2 minute

    Remove from heat and serve.
