  • 1 pkg. (8-1/2 oz.) corn muffin mix
  • 1/3 cup milk
  • 4 eggs, divided
  • 1/4 cup (1/2 stick) butter
  • 4 celery stalks, chopped

  • 1 can (14-1/2 oz.) chicken broth
  • salt and pepper to taste

Directions

    Prepare cornbread with corn muffin mix, adding the milk and 1 egg as directed on package.

    Bake as directed; cool.

    Melt butter in medium skillet.

    Add celery and onion; cook, stirring frequently, until tender.

    Place in large bowl.

    Beat remaining 3 eggs in medium bowl.

    Add broth, salt and pepper.

    Add to celery mixture; mix well.

    Crumble cornbread.
