  • 1 1/2 c. self-rising cornmeal
  • 1/2 c. cooking oil
  • 1 c. buttermilk
  • 1 c. creamed corn
  • 1 tsp. grated onion
  • 1/2 large sweet pepper
  • 1/2 tsp. grated hot pepper (optional)
  • 1 c. grated sharp cheese
  • 3 eggs, beaten

Directions

    Mix all ingredients together, except cheese.

    Pour half of batter in greased pan.

    Sprinkle cheese over the batter.

    Pour rest of batter over cheese.

    Cook at 375° for one hour or until golden brown.
