- 3/4 c. stone ground cornmeal
- 3 tsp. baking powder
- 1 tsp. sugar
- 1 tsp. salt
- 1/2 c. flour
- 2 eggs
- 1 1/4 c. milk
- 3 Tbsp. butter, melted
- 3 ears corn or 1 c. canned corn
Directions

1Preheat oven to 350°.

2Sift the dry ingredients together in a bowl.

3In another bowl, beat the eggs with the milk, then mix them into the dry ingredients.

4Fold in the corn kernels and melted butter.

5Pour into 8 to 10 muffin pans, buttered, and bake for 30 minutes or until golden.

6Serve hot. Delicious with honey!
