  • 3/4 c. stone ground cornmeal
  • 3 tsp. baking powder
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/2 c. flour
  • 2 eggs
  • 1 1/4 c. milk
  • 3 Tbsp. butter, melted
  • 3 ears corn or 1 c. canned corn

    Preheat oven to 350°.

    Sift the dry ingredients together in a bowl.

    In another bowl, beat the eggs with the milk, then mix them into the dry ingredients.

    Fold in the corn kernels and melted butter.
