Corned Beef And Cabbage

- 3 to 4 lb. corned beef brisket
- 6 medium potatoes, peeled and halved
- 6 medium carrots, peeled and quartered
- 6 small onions (whole)
- 1 medium to large head cabbage, cut in wedges
Directions

1Place meat in a deep pot.

2Cover with cold water.

3Cover and simmer gently for 3 to 4 hours or until fork-tender.

4Add potatoes, carrots and onions about 30 minutes before end of cooking time. Add cabbage according to degree of doneness you like.

5Remove meat to cutting board and let set at least 15 minutes before slicing. (Make very thin slices.)

6Serves 8.
