Ingredients

  • 4 medium size potatoes, boiled, peeled and diced (or use leftover boiled potatoes)
  • 1 c. milk
  • 2 eggs
  • 1 (12 oz.) can corned beef
  • 1 onion, chopped fine
  • salt and pepper to taste

Directions

    Mix all ingredients together and pour into a greased casserole dish.

    Mixture will be sloppy.

    Bake in a 350° oven for 1 hour or until firm and crusty.
