  • 3 c. shortening (1/2 butter; 1/2 margarine)
  • 3 c. sugar
  • 4 eggs
  • 6 c. flour
  • 2 c. freshly ground yellow or white cornmeal
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 4 1/2 tsp. vanilla
  • 2 c. raisins (optional)

Directions

    Mix shortening, sugar and egg; beat well.

    Add the other ingredients; mix well.

    Drop by teaspoon on greased cookie sheet. Bake at 350° until lightly brown.

    (They have a better flavor when baked no longer than the light brown stage.)
