- 1 c. flour
- 1 c. yellow cornmeal
- 1/3 c. sugar (omit if desired)
- 1 Tbsp. baking powder
- 1 tsp. salt
- 2 Tbsp. finely chopped onion
- 1 c. cream-style corn
- 1/2 c. mayonnaise
- 3 Tbsp. vegetable oil
- 1 egg
Directions

1In a large mixing bowl, combine flour, cornmeal, sugar, baking powder and salt.

2Add onion, corn, mayonnaise, oil and egg; stir just until dry ingredients are moistened.

3Fill greased or paper-lined muffin cups two-thirds full.

4Bake at 400° for 20 minutes.
