- 3/4 cup cornmeal
- 1 1/4 cups milk
- 1 cup all purpose flour
- 1/3 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg
- 1/4 cup vegetable oil
Directions

1Combine cornmeal and milk. Let stand for 10 minutes.

2Combine flour, sugar, baking powder and salt in a large bowl.

3Add egg and oil to cornmeal mixture. Mix well.

4Add to dry ingredients, stirring just until combined.

5Fill greased muffin pans 2/3 full.

6Bake at 400'F (200'C) for 15 to 20 minutes.
