  • 3/4 cup cornmeal
  • 1 1/4 cups milk
  • 1 cup all purpose flour
  • 1/3 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1/4 cup vegetable oil

Directions

    Combine cornmeal and milk. Let stand for 10 minutes.

    Combine flour, sugar, baking powder and salt in a large bowl.

    Add egg and oil to cornmeal mixture. Mix well.

    Add to dry ingredients, stirring just until combined.

    Fill greased muffin pans 2/3 full.

    Bake at 400'F (200'C) for 15 to 20 minutes.
