- 6 slices bacon
- 4 c. cooked potatoes, cubed
- 1/2 c. chopped green pepper
- 2 Tbsp. chopped onion
- 6 eggs, lightly beaten
- 1 c. shredded Cheddar
Directions

1Cook bacon in skillet until crisp.

2Remove from skillet and pour off fat.

3Add potatoes, pepper and onion to skillet.

4Cook until lightly browned.

5Pour eggs over potatoes.

6Cover and cook until eggs are suitably firm.

7Sprinkle with bacon and cheese. Cover and heat until cheese melts.
