Cous Cous Salad

Ingredients

  • 1 red onion (chopped)
  • low-fat cooking spray
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 12 teaspoon ginger
  • 200 g couscous
  • 2 tablespoons lemon juice
  • 375 ml boiling water
  • 150 g dried apricots (chopped)
  • 1 sweet red pepper (pointed diced)
  • 100 g pistachios (or sunflower seeds roughly chopped)
  • 3 tablespoons flat leaf parsley

Directions

    Cook onion in low fat cooking spray until soft, stir in spices and cook for 1 minute.

    Add the cous cous, stir and remove from heat.

    Add the apricots, pour on boiling water, over and leave to cool.

    Place in a bowl and fluff up with a fork, add lemon juice, pepper nuts and parsley, stir well.
