Couscous stuffed bell pepper

  • 1 large Bell pepper any color cut in half from top to bottom and cleaned
  • 2 cup prepared couscous
  • 1 cup canned diced tomatoes with juice
  • 1/2 cup corn
  • 1/4 small onion, chopped
  • 1 link Italian sausage or brat cooked and out of casing chopped
  • 1 dash garlic powder
  • 1/4 tsp Italian seasoning
  • 1 cup sharp cheddar shredded

    Preheat oven 375F.

    Place bell pepper halves in microwave for 2 minutes on high heat.

    Place half of the cheese in the bottoms of the pepper halves
  4. 4
    Place pepper into a casserole dish or oven safe dish
  5. 5
    Combine all other ingredients and stuff pepper halves then top with remaining cheese and bake for approximately 30 minutes (or desired tenderness)
