Covered Rump Roast

  • 4 lb. rump roast (beef)
  • 1 large onion, sliced
  • 3 Tbsp. flour
  • 2 c. stock or tomato juice
  • 1/4 tsp. Tabasco
  • salt and pepper to taste

Directions

    Place fat side up on rack in a roasting pan.

    Sprinkle with salt and pepper.

    Spread onion slices under and over roast.

    Cover and cook 2 1/2 to 3 hours at 350°.

    Remove from pan and make gravy.
