Ingredients

  • 8 lb. ground chuck
  • 3 medium onions, diced
  • 2 medium bell peppers, diced
  • 2 (8-inch) stalks celery, diced
  • 1 Tbsp. jalapeno pepper (optional)
  • 2 (14 1/2 oz.) cans stewed tomatoes
  • 16 oz. can tomato sauce
  • 2 cans mushroom stems and pieces
  • 16 oz. can tomato paste
  • 2 (3 oz.) bottles chili powder
  • 2 Tbsp. cumin
  • 1 Tbsp. Tabasco sauce
  • 3 bay leaves
  • garlic salt to taste
  • onion salt to taste
  • salt and pepper to taste
  • 4 oz. beer

Directions

    Saute onions, bell peppers, celery and jalapenos in a little oil.

    Add meat and brown.

    Mix in remaining ingredients and add enough water to cover top.

    Cook for 3 hours on low heat.

    This may be a bit more chili powder than you like.

    Taste for seasoning after the first bottle.
