- 1 1/2 c. self-rising cornmeal mix
- 1/2 c. plain flour
- 1 tsp. baking powder
- 1 Tbsp. sugar
- 1 c. milk
- 2 eggs, well beaten
- 2 Tbsp. cooking oil
- 1 small onion, chopped
- 1 (8 oz.) can cream-style corn
- 2 c. Cheddar cheese, shredded
- 12 slices bacon, cooked and crumbled
- 2 Tbsp. chopped red pimentos
Directions

1Combine the first 4 ingredients; mix well.

2Add milk, eggs and oil, stirring well.

3Stir in remaining ingredients.

4Pour into a greased 9-inch square baking pan.

5Bake at 350° for 40 to 45 minutes, or until lightly browned.
