Crab Cakes

Ingredients

  • 1 small onion, chopped fine
  • 1 rib celery, chopped fine
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 1 c. milk
  • 1 tsp. crab mix or dash of cayenne powder
  • 1 lb. crabmeat
  • bread crumbs
  • lemon and pepper seasoning (optional)

Directions

    Saute onion and celery in butter.

    Stir in flour and mix well. Add slowly the milk.

    Keep stirring until smooth.

    Add crab spice. Remove from burner and gently add crabmeat.

    Chill for 1 hour or more. Shape into 6 to 8 oval cakes.

    (Wet your hands to make it easier.)

    Roll in fine bread crumbs (with lemon and pepper seasoning, optional).

    Fry in heated pan or deep fry. Drain and serve.
