Ingredients
- 1 small onion, chopped fine
- 1 rib celery, chopped fine
- 2 Tbsp. butter
- 3 Tbsp. flour
- 1 c. milk
- 1 tsp. crab mix or dash of cayenne powder
- 1 lb. crabmeat
- bread crumbs
- lemon and pepper seasoning (optional)
Directions

1Saute onion and celery in butter.

2Stir in flour and mix well. Add slowly the milk.

3Keep stirring until smooth.

4Add crab spice. Remove from burner and gently add crabmeat.

5Chill for 1 hour or more. Shape into 6 to 8 oval cakes.

6(Wet your hands to make it easier.)

7Roll in fine bread crumbs (with lemon and pepper seasoning, optional).

8Fry in heated pan or deep fry. Drain and serve.
