  • 1 lb. crab meat (spec. or claw)
  • 4 Tbsp. melted butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • pinch of cayenne pepper
  • 2 eggs, well beaten
  • bread crumbs
  • cooking oil

Directions

    Mix crab meat, butter, seasoning and enough egg to mold into cakes.

    Beat 1 tablespoon of water into the remaining egg and dip the cakes in this mixture; roll into bread crumbs.

    Saute until rich brown in frying pan or deep fry at 380°.
