- 1 lb. crab meat (spec. or claw)
- 4 Tbsp. melted butter
- 1/2 tsp. salt
- 1/4 tsp. pepper
- pinch of cayenne pepper
- 2 eggs, well beaten
- bread crumbs
- cooking oil
Directions

1Mix crab meat, butter, seasoning and enough egg to mold into cakes.

2Beat 1 tablespoon of water into the remaining egg and dip the cakes in this mixture; roll into bread crumbs.

3Saute until rich brown in frying pan or deep fry at 380°.
