Crab Casserole

  • 8 to 10 slices white bread, cubed
  • 2 lb. crab meat
  • 3/4 c. mayonnaise
  • 1 onion, chopped fine
  • 1 green pepper, chopped fine
  • 1 c. celery, chopped fine
  • 3 c. milk
  • 4 eggs, beaten
  • 1 tsp. salt
  • 1 small jar pimiento, drained
  • 1 can mushroom soup
  • 1 c. grated American cheese
  • paprika and black pepper

    Grease a 16-inch baking dish and put in 1/2 bread crumbs.

    Mix crab meat, mayonnaise, onion, pepper, celery and pimento and place on bread cubes.

    Put remaining bread cubes on crab mixture.

    Mix eggs, milk, salt and pepper and pour over casserole; let set overnight in refrigerator.

    Next day, cover with undiluted soup and bake at 325° for 50 minutes.

    Add cheese and paprika and bake 10 minutes.
