Ingredients

  • 1 lb. crab (best you can get)
  • 3/4 c. finely chopped onion
  • 3/4 c. finely chopped celery
  • 1/4 c. butter
  • 1 Tbsp. flour
  • 1 1/2 c. half and half
  • 1 Tbsp. mayonnaise
  • 1 Tbsp. ketchup
  • 1 c. homemade bread crumbs (needs fluffiness of real bread)
  • 1/4 c. white wine
  • 1 Tbsp. lemon juice
  • 2 Tbsp. parsley (fresh)
  • white pepper, lemon juice, Tabasco and salt to taste

    Saute onion and celery together in butter very slowly until tender.

    Add everything else but crab, adding crab last.

    Need a big pan for this recipe.

    Spray shells with Pam and fill.

    Can be made ahead.

    Top with butter and bread crumbs.

    Bake at 375° until bubbly and slightly brown.

    Serve with scalloped potatoes and asparagus.
