Ingredients
- 1 lb. crab (best you can get)
- 3/4 c. finely chopped onion
- 3/4 c. finely chopped celery
- 1/4 c. butter
- 1 Tbsp. flour
- 1 1/2 c. half and half
- 1 Tbsp. mayonnaise
- 1 Tbsp. ketchup
- 1 c. homemade bread crumbs (needs fluffiness of real bread)
- 1/4 c. white wine
- 1 Tbsp. lemon juice
- 2 Tbsp. parsley (fresh)
- white pepper, lemon juice, Tabasco and salt to taste
Directions

1Saute onion and celery together in butter very slowly until tender.

2Add everything else but crab, adding crab last.

3Need a big pan for this recipe.

4Spray shells with Pam and fill.

5Can be made ahead.

6Top with butter and bread crumbs.

7Bake at 375° until bubbly and slightly brown.

8Serve with scalloped potatoes and asparagus.

9Serve a salad for a first course.
