Ingredients
- 1 can backfin crab meat
- salt and pepper to taste
- 1 garlic clove (optional)
- 1/4 c. cooking oil
- 1 bunch spring/green onions
- 2 medium sized onions, minced
- 1 c. tomato puree or 1 can condensed tomato soup
- 4 oz. butter
- 1 c. coconut milk (can be purchased in the can)
- 4 c. rice (uncooked)
- 1 chopped red or green bell pepper
- 1 hot green pepper (left whole)
- 1 Tbsp. lime juice
Directions

1Clean crab meat by removing shells.

2Place in mixing bowl. Add lime juice, salt and pepper.

3Saute chopped clove of garlic, spring/green onion, minced onions and chopped bell pepper in cooking oil.

4Add tomato puree or soup and whole hot green pepper; simmer for 10 minutes.

5Add butter and 1/2 cup of coconut milk; simmer for 20 minutes.

6Add remaining coconut milk and crab meat. Bring to a boil.

7Add washed rice.

8Cover tightly.
-
9Reduce heat and steam until rice is cooked.
