Crab Quiche

  • 1 baked pie shell, cooled
  • 1/2 c. mayonnaise
  • 1/2 c. milk
  • 2 eggs
  • 1 Tbsp. cornstarch
  • 1 c. crab meat (1 to 2 cans)
  • 1 1/2 c. Swiss or Gruyere cheese, grated
  • 1/3 chopped onion

Directions

    In blender, combine mayonnaise, milk, eggs and cornstarch. Process until smooth.

    Add crab meat, cheese and onion and blend at low speed just to combine (3 to 4 seconds).

    Pour mixture into baked pie shell.

    Bake at 350° for 35 to 45 minutes until top is puffed up and golden brown.

    Remove from oven and allow to rest 10 minutes before serving to firm up the custard.
