- 1 red chili pepper large, seeded and finely chopped
- 1 clove garlic
- 1 cilantro root washed and chopped
- 1/2 teaspoon white pepper
- 1/3 cup lime juice
- 10 ounces lump crab meat
- 1 kaffir lime leaf shredded
- 1/2 stalk lemongrass shredded
- 1 red chili pepper large, seeded and shredded
- 2 tablespoons fresh mint leaves torn
- 2 tablespoons cilantro leaves fresh, torn
- 2 tablespoons bean sprouts
- roe Sea trout, for garnish
Directions

1For the dressing, place the chili pepper, garlic, cilantro and pepper into a mortar. Season with salt and pound with a pestle until smooth. Stir in the lime juice.

2For the crab salad, place the crab, lime leaf, lemongrass, chili pepper, herbs and bean sprouts into a large bowl and toss with the dressing.

3Divide the crab salad among 4 serving plates. Garnish with trout roe.
