Ingredients

  • 1 red chili pepper large, seeded and finely chopped
  • 1 clove garlic
  • 1 cilantro root washed and chopped
  • 1/2 teaspoon white pepper
  • 1/3 cup lime juice
  • 10 ounces lump crab meat
  • 1 kaffir lime leaf shredded
  • 1/2 stalk lemongrass shredded
  • 1 red chili pepper large, seeded and shredded
  • 2 tablespoons fresh mint leaves torn
  • 2 tablespoons cilantro leaves fresh, torn
  • 2 tablespoons bean sprouts
  • roe Sea trout, for garnish

Directions

    For the dressing, place the chili pepper, garlic, cilantro and pepper into a mortar. Season with salt and pound with a pestle until smooth. Stir in the lime juice.

    For the crab salad, place the crab, lime leaf, lemongrass, chili pepper, herbs and bean sprouts into a large bowl and toss with the dressing.

    Divide the crab salad among 4 serving plates. Garnish with trout roe.
