Crabapple Jelly

- 5 lbs crabapples
- 5 cups water
- 1 3/4 ounces dry pectin
- 9 cups sugar
Directions

1Wash apples, remove stems and bad spots.

2Combine water and apples in stock pot and cook until soft.

3Strain through a jelly bag to make 7 cups of juice.

4Combine juice and pectin in a large kettle.

5Bring to a full boil over high heat, stirring constantly.

6Stir in sugar completely, and while stirring return to a full boil.

7Keep stirring while you boil for one minute.
-
8Remove from heat and skim foam from surface.
-
9Pour into hot sterilized jars.

10Seal and process 10 minutes in boiling water bath.
