- 12 lb fresh crabmeat
- 4 dried mushrooms
- 13 cup water chestnut
- 14 cup sliced bamboo shoot
- 4 eggs
- 12 teaspoon salt
- 14 teaspoon pepper
- 2 tablespoons oil
- 12 teaspoon minced ginger
- 2 scallions, minced
- 12 cup bean sprouts
Directions

1Pick over crabmeat to remove any cartilage or shell.

2Soak mushrooms in a bowl of warm water until soft, about 15 minutes.

3Remove stems and discard.

4Cut caps into thin strips.

5Coarsely chop water chestnuts and bamboo shoots.

6Beat eggs with salt and pepper.

7In a wok, heat oil over high heat until just smoking.

8Add minced ginger and scallions and stir fry until fragrant, about 10 seconds.

9Add crabmeat, mushrooms, water chestnuts, and bamboo shoots and stir fry 3 minutes, tossing to blend well.

10Add bean sprouts and toss to mix.

11Reduce heat to medium.

12Pour beaten eggs over crabmeat mixture and cook over moderate heat until omelet is set, about 3 minutes.
