- 2 c. all-purpose flour
- 1 tsp. ginger
- 1 tsp. salt
- 1 tsp. baking soda
- 1 c. milk
- 1/2 c. butter, melted
- 1/2 c. honey, room temperature
- 1 large egg
- 2 Tbsp. chopped, preserved ginger (optional)
Directions

1Preheat oven to 350°.

2Grease and flour a 9 x 5-inch loaf pan. Mix together dry ingredients.

3In a bowl, mix together milk, butter, honey, egg and ginger.

4Make a well in center of flour. Add milk all at once; toss with a fork until dry ingredients are just mixed (do not overmix).

5Spoon batter into pan.

6Bake until brown and tests done, about 55 to 60 minutes.

7Cool on wire rack for 10 minutes.

8Loosen loaf by running a metal spatula around side of pan.

9Turn loaf out onto rack to cool completely.
