- 1 (8 oz.) pkg. cream cheese, softened
- 1 small onion
- 1 egg yolk
- 1 (6 oz.) can crabmeat, rinsed, drained and picked through for shells
- 1 large tomato, sliced
- 6 Holland rusks or 3 English muffins, split and toasted
- grated sharp Cheddar cheese
Directions

1Combine cream cheese and onion in food processor until well blended.

2Grate onion and mix with cheese.

3Add egg yolk; mix well.

4Add crabmeat.

5Refrigerate 1 hour to stiffen and combine flavors.

6Preheat oven to 350°.

7Place Holland rusks or toasted English muffins on baking sheet.

8Place a slice of tomato on each. Top with crab mixture and grated cheese.

9Bake 15 minutes. Serves 3 to 6.
