Crabmeat-Vegetable Pie

  • 6 oz. crabmeat (fresh or frozen)
  • 1/2 c. water chestnuts, chopped
  • 8 oz. fresh snow peas, blanched (frozen can be used)
  • 1 Tbsp. soy sauce
  • 1 1/2 c. milk
  • 3/4 c. prepared biscuit mix
  • 3 eggs
  • 1/2 tsp. pepper
  • bacon and cheese (on top for garnish if desired)

Directions

    Preheat oven to 400°.

    Lightly grease a 10-inch pie pan (can also be made in a 2-quart casserole dish).

    Combine the first 4 ingredients in pie pan.

    Beat remaining ingredients until smooth; pour over crabmeat.

    Bake for 35 minutes, or until golden brown. Let stand 5 minutes before cutting.
