Cracked Wheat Bread

- 2 pkg. active dry yeast
- 1 c. warm water
- 1 c. milk, scalded
- 1 tsp. salt
- 2 tsp. butter
- 1/4 c. molasses
- 1 c. cracked wheat, soaked in cold water overnight
- 6 c. all-purpose flour
Directions

1Dissolve yeast in warm water in a large mixing bowl.

2In another bowl, pour the milk over butter, molasses and cracked wheat mixture, stirring until lukewarm, then combine with yeast and water, stirring.

3Gradually add half the flour and beat for 3 minutes, then add the rest of flour (needed) to make a stiff dough.

4Turn out onto lightly floured board and knead until satiny smooth.

5Place in greased bowl.

6Turn once.

7Cover with clean cloth and place in a warm spot.

8Let rise 40 minutes.

9Punch down, shape into loaves and place in greased bread pans.

10Bake in 375° oven for 10 minutes.

11Lower heat to 350° and bake for 40 more minutes.

12Remove from pans to rack; cool.
