  • 3 c. fine cracker crumbs
  • flour (seasoned to taste)
  • oil (for cooking, very hot)
  • 2 eggs
  • 1 c. milk

    Combine milk and eggs and mix well.

    Roll chicken in flour mixture; dip in egg batter.

    Roll in cracker crumbs.

    Cook until brown; reduce heat.

    Cover and cook 30 to 45 minutes longer. Remove lid; turn heat back up to crisp.
