  • 3 egg whites
  • 1/4 tsp. salt
  • 3/4 c. sugar
  • 1 c. chopped pecans
  • 18 plain crackers, crushed
  • 1 tsp. vanilla extract
  • 1/2 c. heavy cream
  • 1/4 c. pineapple topping for ice cream

Directions

    Beat egg whites until stiff.

    Fold in nuts, cracker crumbs and vanilla.

    Mix well and pour into well buttered 9-inch pie pan. Bake in preheated 375° oven for about 35 minutes.

    Cool.

    Whip the cream until stiff.

    Fold in pineapple topping and spread on pie. Chill.
