- 2 cups milk
- 1 cup cracklings
Directions

1Combine cornmeal, flour, baking powder, and salt; stir in egg and milk. Add cracklings to batter, stirring well.

2Heat two well-greased muffin pans in a 400° oven for 3 minutes or until very hot. Pour batter into hot muffin pans, filling two-thirds full. Bake at 350° for 30 minutes or until golden brown.
