  • 1 1/2 cups rolled oats
  • 3 1/2 ounces pecans chopped
  • 2 1/2 ounces pumpkin seeds
  • 1 ounce shredded coconut
  • 1/2 cup maple syrup
  • 2 teaspoons vegetable oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 4 1/2 ounces dried cranberries
  • 2 1/2 ounces dried apple finely chopped

Directions

    Preheat the oven to 350°F.

    In a large baking dish, combine oats, pecans, pumpkin seeds, coconut, syrup, oil and spices.

    Bake for 15-20 mins, stirring occasionally. Allow to cool. Stir in dried cranberries and apple. Store in an airtight container.
