Cranberry Bread

Ingredients

  • 2 c. sifted flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • juice and grated peel of 1 orange
  • 2 Tbsp. melted shortening
  • 1 well beaten egg
  • 2 c. fresh or frozen cranberries, cut in half
  • 1/2 c. chopped nuts

Directions

    Sift dry ingredients together.

    Combine orange juice, peel, shortening and enough water to make 3/4 cup liquid.

    Stir in egg. Pour into dry ingredients.

    Mix just enough to dampen.

    Fold in nuts and cranberries.

    Spread into pan, 9 x 5 x 3-inch, higher around the outside edges.

    Bake at 350° for 50 to 60 minutes. Slices best the next day.
