- 12 cup butter, softened
- 12 cup Splenda sugar substitute
- 1 egg
- 1 egg white
- 1 teaspoon almond extract
- 12 teaspoon coconut extract
- 2 cups flour
- 14 cup wheat flour
- 1 cup dried cranberries
- 34 cup coconut
Directions

1Preheat oven to 350F and grease two baking sheets.

2Combine butter and Splenda in a large mixing bowl.

3Mix with a electric mixer until combined.

4Add egg and egg white with the two extracts.

5Beat until the mixture is smooth.

6Add flour to the mixutre, and stir by hand until incorporated.

7Stir in the cranberries and coconut.

8Drop dough onto baking sheets in teaspoon sized balls.

9Bake until edges are lightly browned.

10Remove from oven and let sit for 2 minutes on the sheets, and then transfer to wire rack to cool completely.
