Ingredients
- 2 c. flour
- 1 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/3 c. orange juice
- 1 tsp. grated orange rind
- 2 c. fresh cranberries, washed and cut in half
- 3/4 c. coarsely chopped walnuts
- 2 Tbsp. butter, melted and cooled
- 1 c. plus 1 Tbsp. sugar
- 1 tsp. salt
- 1 egg, well beaten
- 1/4 c. water
Directions

1Sift together flour, sugar, baking powder, salt and baking soda in a large bowl; set aside.

2Combine egg, orange juice and water; stir in melted butter.

3Make a well in the center of dry ingredients.

4Add the liquid ingredients all at one time.

5Stir only enough to moisten.

6Add nuts, cranberries and grated orange rind.

7Stir just enough to blend.

8Pour into greased and floured loaf pan.

9Bake at 350° for about 70 minutes or until cake tester comes out clean.

10Cool thoroughly.
