Cranberry Nut Pound Cake

  • 2 1/2 sticks margarine
  • 4 eggs
  • 3 1/2 c. plain flour
  • 1 c. buttermilk
  • 3/4 c. chopped cranberries
  • 2 1/2 c. sugar
  • 1 tsp. lemon flavoring
  • 1/2 tsp. baking soda
  • 1 pkg. lemon instant pudding mix
  • 3 or 4 c. chopped nuts (pecans or walnuts)

    Cream margarine and sugar until fluffy.

    Add eggs, one at a time.

    Sift flour, lemon pudding mix and baking soda together.

    Add flour and milk alternately, ending with flour.

    Add cranberries, sprinkled with 3 tablespoons powdered sugar, and nuts, sprinkled with flour.

    Pour in large tube pan and bake at 325° for 1 hour and 15 minutes.
