  • 1 12 cups cranberries
  • 13 cup sugar
  • 2 scallions, chopped
  • 14 cup chopped of fresh mint or 14 cup cilantro
  • 1 lime, juice and zest
  • 1 jalapeno pepper, seeded and minced
  • 2 teaspoons chopped fresh ginger
  • 18 teaspoon salt

Directions

    in a food processor, combine cranberries, sugar, scallions, mint, lime juice and zest, jalapeno pepper, ginger and salt.

    Pulse on and off until mixture is uniformly chopped, yet still maintains some texture.

    Cover and refrigerate 2 hours or overnight to let flavors blend.
