  • 1 egg
  • 2 ounces cheese
  • 1 teaspoon milk

Directions

    Rub cooked potatos through a sieve, and season with salt and pepper.

    Stir in milk and grated cheese, then half the well beaten egg.

    Form into balls and dust with flour.

    Let them rest for an hour or more.

    Dip in beaten egg, then in breadcrumbs and fry a golden brown in boiling fat.

    Drain and serve.
