- 2 boiled potato
- 1 egg
- 2 ounces cheese
- 1 teaspoon milk
Directions

1Rub cooked potatos through a sieve, and season with salt and pepper.

2Stir in milk and grated cheese, then half the well beaten egg.

3Form into balls and dust with flour.

4Let them rest for an hour or more.

5Dip in beaten egg, then in breadcrumbs and fry a golden brown in boiling fat.

6Drain and serve.
