- 3 lb. cooked crawfish, well seasoned with crab boil
- 1 bunch green onions, chopped
- 1 stick butter
- 1 1/2 c. heavy cream
- 1 lb. fresh pasta
Directions

1Peel crawfish tails, reserving heads.

2Make a stock by boiling heads in 2 cups water for 5 minutes.

3Saute tails and green onions in butter until hot.

4Add 3 to 4 tablespoons of the stock and the cream.

5Heat but do not boil.

6Should be slightly thick.

7Cook pasta.

8Add sauce and toss.

9Heat over medium heat.

10Serve immediately.

11Shrimp can be used in place of crawfish.
