Crawfish Casserole

  • bunch parsley, chopped
  • 1 chopped onion
  • 1 chopped bell pepper
  • 2 stalks celery, chopped
  • 1 can cream of mushroom soup
  • 1 pkg. Mahatma yellow rice, prepared according to directions
  • 1 lb. crawfish tails with fat
  • 1 can Ro-Tel tomatoes, drained
  • 1 c. grated Cheddar cheese

Directions

    Saute onions, bell pepper, celery and 2 tablespoons margarine.

    Mash Ro-Tel tomatoes, add and steam for about 10 minutes.

    Add prepared rice, soup and crawfish tails.

    Add parsley and place mixture in casserole dish.

    Top with grated cheese and bake for 40 minutes at 325°.

    Serves 6 to 8.
