Crawfish Casserole

- 3/4 c. butter (I use less)
- 1 c. chopped celery
- 1 can cream of mushroom soup
- 2 c. cooked rice
- 1/2 c. chopped parsley
- salt and pepper to taste
- 1 c. chopped onion
- 1 1/2 c. chopped bell pepper
- 1 lb. crawfish tails
- 1/2 c. chopped green onions
- bread crumbs for topping
Directions

1Melt butter; add onion, celery and bell pepper and cook for a few minutes.

2Blend in soup and remove from heat.

3Add crawfish and rice, green onions and parsley.

4Blend; season to taste and place in buttered casserole dish.

5Top with bread crumbs and bake at 375° for 30 minutes.

6Serves 6 to 8.
