Crawfish Casserole

Ingredients

  • 3/4 c. butter (I use less)
  • 1 c. chopped celery
  • 1 can cream of mushroom soup
  • 2 c. cooked rice
  • 1/2 c. chopped parsley
  • salt and pepper to taste
  • 1 c. chopped onion
  • 1 1/2 c. chopped bell pepper
  • 1 lb. crawfish tails
  • 1/2 c. chopped green onions
  • bread crumbs for topping

Directions

    Melt butter; add onion, celery and bell pepper and cook for a few minutes.

    Blend in soup and remove from heat.

    Add crawfish and rice, green onions and parsley.

    Blend; season to taste and place in buttered casserole dish.

    Top with bread crumbs and bake at 375° for 30 minutes.

    Serves 6 to 8.
