Crawfish Casserole

  • 1 onion
  • 2 sticks celery
  • 1 bell pepper
  • 1 stick margarine or butter
  • 2 cans mushroom soup
  • 2 cans Ro-Tel tomatoes
  • 2 lb. crawfish
  • 1 pkg. grated Cheddar cheese
  • 1 pkg. cooked Mahatma rice
  • parsley

Directions

    Saute onions, pepper, margarine and celery.

    Mash Ro-Tel tomatoes and drain.
  3. 3
    Add to onion mix and cook about 10 minutes. Mix rice with onions and tomatoes.

    Add mushroom soup, parsley and crawfish.

    Top with grated cheese.

    Bake for 40 minutes at 325°.
