Crawfish Casserole

- 1 onion
- 2 sticks celery
- 1 bell pepper
- 1 stick margarine or butter
- 2 cans mushroom soup
- 2 cans Ro-Tel tomatoes
- 2 lb. crawfish
- 1 pkg. grated Cheddar cheese
- 1 pkg. cooked Mahatma rice
- parsley
Directions

1Saute onions, pepper, margarine and celery.

2Mash Ro-Tel tomatoes and drain.

3Add to onion mix and cook about 10 minutes. Mix rice with onions and tomatoes.

4Add mushroom soup, parsley and crawfish.

5Top with grated cheese.

6Bake for 40 minutes at 325°.
