Crawfish Elegante

Ingredients

  • 1 lb. crawfish
  • 1 1/2 sticks butter
  • 3 Tbsp. flour
  • salt/red pepper to taste
  • 1 small bunch green onions
  • parsley
  • 1 pt. half and half
  • 1/2 pkg. egg noodles

Directions

    In a saucepan, melt 1/2 stick butter and saute crawfish for 10 minutes.

    Season with salt/red pepper.

    While this is cooking, melt stick of butter in skillet and saute onions and parsley until wilted.

    Add the flour and gradually add half and half.

    Stir constantly until thickened.

    Add salt and red pepper.

    Boil 1/2 package egg noodles; drain.

    Mix with other ingredients.
